Raspberries de Pizan
Fresh raspberry purée, a touch of balsamic vinegar and cracked pepper enrobed in bittersweet chocolate
This chocolate came about because a local farmer grows such amazingly delicious raspberries. All summer I freeze them, and all winter I eat them for breakfast and late night snacks. His raspberries are Certified Naturally Grown, which is a decentralized certification system for farms that is stricter than and superior to organic certification.

The raspberry purée is mixed with a touch of balsamic vinegar and fresh-ground peppercorns. It starts out tart and sweet and incredibly fruity in your mouth, then finishes with a little exclamation point of pepper.
Raspberries de Pizan are named after Christine de Pizan (1364-1431), a Venetian-born intellectual whose criticism of a popular book because of its extreme misogyny initiated what was called the querelle des femmes (argument about women) which is widely seen as the beginning of modern feminism. In 1405 she wrote The Book of the City of Ladies, a passionate celebration of women’s intellectual power.
